Turkey Taco Quinoa Skillet

My family is having a love affair with this turkey taco quinoa skillet. I’ve seriously made it every week for the last month and we’re still loving it. The green chilis, taco seasoning and salsa pack it with deep, slow-cooked flavor in a fraction of the time. My kids inhale it by the spoonful. My husband and I wrap it into tortillas with guacamole and sour cream, or scoop it with chips after the for our the-kids-are-in-bed snack. It’s giving our go-to turkey burritos a run for their money.

What’s my favorite part? I’m so glad you asked. My favorite part is the fact that this recipe only requires about 10 minutes of hands-on, standing-in-front-of-the-stove time. After that, put a lid on it and forget about it until the timer goes off. Play with your kids, read a book, or heck, close your eyes for a bit. You deserve it. And you deserve this turkey taco quinoa skillet for dinner tonight.

Turkey Taco Quinoa Skillet

Deep, slow-cooked flavor in just 30 minutes. Wrap this delicious turkey taco quinoa skillet filling into tortillas, scoop it with chips or eat it with a spoon.

Equipment

  • Medium skillet
  • Can opener
  • Wooden spoon

Ingredients
  

  • 1 Tbsp olive oil
  • 1/2 pound ground turkey
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 4 oz can green chilis
  • 1/2 packet taco seasoning
  • 1/2 tsp salt
  • 1 can black beans, drained and rinsed 15 oz
  • 1 can diced tomatoes 14.5 oz
  • 1/2 cup frozen corn
  • 1/2 cup salsa
  • 1 cup quinoa
  • 1/2 cup water
  • 1 cup cheddar or monterrey jack cheese

Instructions
 

  • Heat a large skillet over medium heat. When hot, add the olive oil and onion. Cook for about 2 minutes until it starts to soften. Add in the turkey and garlic and cook until the meat is almost cooked through, breaking it up into crumbles as it cooks. Stir in the taco seasoning and diced green chiles, cooking for another minute. Add the black beans, corn, tomatoes, salsa, quinoa and water, stirring until everything is combined.
  • When the mixture starts to bubble, cover the skillet with a lid and lower the heat to medium-low. Simmer for about 20-25 minutes or until the quinoa is cooked.
  • Sprinkle the shredded cheese over top and cover with the lid cooking until the cheese is melted.
