Okay, hold on now! Where did June go? K and I have been so busy with wedding stuff (if you didn’t know, we got married just a couple weeks ago 🙂 ), that we’ve hardly noticed the weeks flying by. But time hasn’t slowed down even a little, and July 4th celebrations are already right around the corner. Whether you’re headed out of town or staying in for some much needed relaxation, these healthy and delicious recipes will help you make the most of your long weekend without spending all of your time in the kitchen.
K and I are packing up the car and loading up our new bikes (!!!) on Thursday evening to head up into northern Michigan, back to our happy place, to spend the weekend with family. There’s likely going to be boating, sun bathing, lounging, napping, reading — oh, and LOTS of biking!! — to be done. Did I mention napping? Okay, good. Because that’s a really important part of my plan for the holiday weekend.
And now, without further ado (because it’s a gorgeous morning and my bike is calling my name) I give you some of my favorite, healthy + delicious + quick summer time meals and snacks to make over the July 4th weekend. Bon appetit!
Don’t skip your greens over the holiday weekend! This creamy, dreamy salad is packed with buttery lettuce, kale, parsley, pears, green onions and peppitas — for a litlte extra crunch. You definitely don’t need to feel bad about all the lounging and treats and beverages consumed over the long weekend with this salad recipe in your back pocket. So many textures and all of the green veggie power that will have you glowing in your summer skin from the inside out. And I mean, who couldn’t use a little extra “power” in their lives!
Okay, I still can’t EVEN with these tacos. They deserve their own food group, for reals. Spicy chicken layered with smashed avocado, creamy-crunchy slaw and crumbly-salty cotija cheese. All wrapped up in soft flour tortillas with lots and lots of lime. Want to add a few dashes of your favorite hot sauce for some extra heat? Go right ahead! I’ll allow it 😉 And the best part? These handheld little bites of heaven come together in just 2o minutes if you’ve got some leftover grilled chicken lying around. Boom!
Skip the meat and take these ultimate veggie burgers to the grill, and I’m telling you — everyone will be so impressed, they’ll be asking you how you did it. I used to douse my burgers in ketchup.. And then dip them in ketchup. I’m not even lying. But these smoky, creamy, cheesy veggie burgers came into my food life, and I’m forever changed. Not a drop of ketchup needed to devour each and every last bite.
These juicy, creamy, flavorful skewers of bite-size chicken couldn’t get any cuter! With a quick brine and a garlicky rub, plain old chicken is transformed on the grill into smoky, charred perfection with lots of yogurt sauce, lime and torn cilantro. These skewers just scream summer, and the chicken cooks up super quick so you can get to eating in no time.
Another perfect use for leftover grilled chicken! Chop it or shred it, and then layer it in a bowl with sticky rice, avocado, cilantro, lime, bell peppers — and how about that fresh roasted tomatillo salsa?? Oh man, I pretty much love everything about Mexican food. I got so excited to eat these bowls of deliciousness that I forgot to add the cheese I had shredded up on the side. So by all means, add a few pinches of some good cheddar or pepperjack in there if you’re feelin’ it.
On long weekends outside with family and friends, really good snack foods are an absolute must. Even better if they’re portable and contained in their own little packages like these sweet, salty, tangy raspberry pistachio muffins. They may not scream 4th of July from the outside, but when you bite into them, the burst of flavor will have you seeing fireworks. Okay…. maybe not that dramatic. But they are pretty darn good if I don’t say so myself!
July = hot hot hot weather. I cannot wait to get outside and enjoy the sunshine for three whole days. This bright, summery dessert is the perfect way to cool down from the heat of the day. And you don’t have to spend hours in the kitchen making it! Just 2 ingredients and 5 minutes is all you’ll need to whip up this creamy, dreamy, tart coconut mango sorbet.
