Roasted Cherries with Greek Yogurt and Granola

Juicy sweet cherries burst with flavor when roasted with a touch of brown sugar! Spoon over Greek yogurt and top with granola for a super quick (make ahead!) yet fancy breakfast.
Serves: 2
  • 2 cups cherries, pitted (thawed if using frozen)
  • 2 tsp brown sugar
  • 1 cup plain Greek yogurt
  • ½ cup granola (whatever’s your fav!)
  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. In a bowl, toss the cherries with brown sugar to coat. Spread in a single layer on the parchment-lined baking sheet and roast for about 10 minutes, until softened and caramelized.
  2. Spoon over Greek yogurt and sprinkle with your favorite granola! Making them ahead? Let the cherries cool to room temperature and store in a sealed container in the fridge -- they should keep for a few days, if they last that long!
