Superfood Pesto

All of the summer green veggies are packed into this Superfood Pesto (vegan optional!), perfect for dipping veggies and crostini, tossing with pasta, and topping your protein of choice.
Serves: 4
  • 1 cup baby kale
  • 1 cup baby spinach
  • ½ cup parsley
  • Juice of ½ a lemon
  • 1 tsp chopped garlic
  • ½ cup walnut halves
  • ¼ cup shredded parmesan (optional)
  • ½ cup extra virgin olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  1. Add all ingredients into a food processor.
  2. Pulse until it starts to come together and then puree on high until completely smooth.
