Ingredients
- 1 cup mashed, overripe bananas (about 3 small bananas)
- 1 tsp vanilla
- 4 oz unsweetened applesauce
- ¾ cup almond milk
- ¼ cup maple syrup
- 1 Tbsp ground flaxseed
- 1½ cups whole wheat flour
- 1 cup rolled or instant oats
- ¾ tsp baking soda
- 1½ tsp baking powder
- ¼ tsp salt
- 1 banana, sliced into ¼" thick rounds (optional topping)
Instructions
- Preheat the oven to 350 degrees F. Prepare a loaf pan with nonstick cooking spray. Set aside.
- Combine all of the wet ingredients and the ground flaxseed in a mixing bowl.
- In a separate bowl, stir together the dry ingredients. Add the dry ingredients to the wet ingredients, and stir until just combined.
- Pour the batter into the loaf pan and spread evenly. If using, layer the banana slices on top of the batter, down the center of the pan length-wise.
- Bake on the middle rack of the oven for 55-60 minutes, until starting to brown and pull away from the edges of the pan.
- Serve plain, or (our favorite) topped with peanut butter!!
